“Mixed Double” Jörg Wörther & Toni Mörwald
At the invitation of the recently proclaimed Euro-Toques cook Toni Mörwald, the Salzburg master chef who established his reputation among experts as “the Mozart of Cuisine” at Badgastein’s Villa Hiss, at Prielau Castle in Zell am See and most recently at Carpe Diem in Salzburg’s Getreidegasse, has moved the focus of his culinary activity to Vienna.. Every Tuesday Wörther will create a five-course menu (at noon for €95) and an eight-course menu (in the evening for €165), and Toni Mörwald will make available to Wörther and his guests the historical ambience of his restaurant Toni M. in Vienna’s elegant Hotel Ambassador. The collaboration between Mörwald and Wörther will also extend to such joint activities as cookery courses in Vienna and the Krems area as well as guest appearances at some of the world’s top gourmet addresses.
AUSTRIA’S ANSWER TO MOLECULAR CUISINE
The numerous guests who have been missing Jörg Wörther’s unmistakable organically grown, ecologically sensitive cuisine, his intimate understanding of the products required and his quest for a style of convincing yet relaxed harmony have good reason for new optimism. At Vienna’s Hotel Ambassador, Wörther will be ignoring the demands of “trendy” cuisine and implementing his culinary philosophy without bowing to the current Zeitgeist of taste or kowtowing to the current “molecular” fashions. Those looking for uncompromising grand cuisine should mark Tuesdays on their calendars as “Ambassador day”. On the other days of the week the popular business restaurant in the heart of Vienna’s inner city will continue to serve the time-honoured cuisine of Toni M.’s Ambassador team under Ralf Kampf & Michael Strobl.
FUTURE PROSPECTS BETWEEN VIENNA’S KÄRNTNER STRASSE AND DONNERBRUNNEN
Both Jörg Wörther and Toni Mörwald consider their planned collaboration to be a culinary “test balloon”. If the concept they have jointly developed proves successful with the public, they already have a number of other activities in mind, including a jointly authored cookery book by the two master chefs. Highest Award: Toni Mörwald Named EURO-TOQUES MAÎTRE
Feuersbrunn/Austria / Kaisersbach-Ebni:
At a special ceremony on 25 January 2008, Toni Mörwald of Mörwald’s “Zur Traube” (Kleine Zeile 10 –17, A-3483 Feuersbrunn, Austria) has been named a Euro-Toques Master Chef by Ernst-Ulrich W. Schassberger, president of Euro-Toques D-A-CH-FL-South Tyrol/Alto Adige.
“We have come here today to admit Toni Mörwald to the association of the top European chefs“, said Schassberger in his opening remarks. “Toni Mörwald, you have a wealth of experience at Austria’s finest restaurants and have taken part in competitions in France; Budapest, Hungary; and Lausanne, Switzerland.
Your home country was not big enough for you; you prepared fine cuisine for the whole world and garnered international experience before taking over your parents’ restaurant “Zur Traube” here in Feuersbrunn in 1989.”
Describing Mörwald’s career, Schassberger continued: “Only a year later you became Austria’s youngest chef to be awarded a toque. But that was only the beginning of your success story. Whether you have been involved in gourmet catering, cookery seminars, publication of your own books, radio broadcasts and, finally, your own cookery programme on television, all of it has contributed to your personal success. The award you received as Chef of the Year in 2004 was followed by your being selected Grand Chef de Cuisine in 2006, and now your extraordinary career is being crowned by this award naming you a Euro-Toques Maître.
Two “godfathers” can vouch for Toni Mörwald: Eckart Witzigmann, who was a founding member of Euro-Toques and Reinhard Gerer, a Euro-Toques Maître at the Vienna restaurant Korso bei der Oper. Both are familiar with his qualifications and have held his work in high esteem for many years.
The numerous guests, friends, regulars and members of the press enjoyed a brilliant celebration with a variety of culinary highlights. They all agreed that Toni Mörwald well deserves his appointment as a Euro-Toques Maître.
Among the many guests was Helmut A. Gansterer, who said: “Toni Mörwald is unsurpassed in his universality. In the thin air at the top of his profession, there are very few chefs with whom one can have such fine discussions about parfaits & politics, traditions & trade, lobsters & love. Up to a point, he gets better with every glass.” Brimming with enthusiasm, Gansterer continued, “He is the ideal cook to be named a new Euro-Toques Maître.”
This nomination is one of the highest honours for Europe’s top chefs. As the European Community of Cooks, Euro-Toques, which takes its name from the white cooking hat that chefs wear, was founded in 1986 at the instigation of Jacques Delors, who was president of the European Community at the time, by such celebrated chefs as Paul Bocuse of France, Baron Pierre Romeyer of Belgium, Toni Tintinger of Luxemburg, Juan Mari Arzak of Spain, Gualtiero Marchesi of Italy and Eckart Witzigmann of German, to name only some of them.
For some time now the German branch of Euro-Toques has been creating quite a stir with its programme to make the country’s palates more sensitive, including a “tasting school” at Germany’s kindergartens, primary and secondary schools. The goal of the newly founded Euro-Toques School Cookery Club is to promote independent and imaginative preparation and creation of dishes as an alternative to fast food and microwave ovens. Children are taught in an entertaining manner about healthy nutrition and the naturally produced foodstuffs from their regions. Euro-Toques chefs offer professional training, promote the fun of cookery, support knowledgeable food shopping, and encourage creativity and awareness of good taste in healthy foods.
In its newly founded Euro-Toques Amateur Chef’s Club, the organisation also seeks to give fine hobby chefs an opportunity of cooking together with an awareness of good nutrition in a relaxed private atmosphere and with naturally produced foodstuffs.
The target group is small private cookery groups: hobby chefs who want to form their own cookery clubs and existing groups who would like the support of a professional Euro-Toques Master Chef.

After the six years of success of our “Classic with a Twist”, we are pleased to announce our new creation, “Ambassador Meets Austria”, conceived by Toni Mörwald & our new chef de cuisine, Marco Pedrelli (Residenz Heinz Winkler, Aschau; Glashütte, Siegen; Massimiliano, Munich), starting 1 May. The new cuisine is based on a dedication to the components of pleasure, flavour, salty and sour tastes in perfect harmony with the oil and butter and as well as a wide range of sauces & vinaigrettes.

The Authors:
Christoph Wagner was born in Linz in 1954. He studied German language and culture, English philology and cultural management. As a free-lance author, he specialises in the cultural history of food and drink. He has written many successful books that have become standard works on the topic of cookery. His most recent book, published by Pichler, was Das Neue Sacher Kochbuch (“The New Hotel Sacher Cookery Book” with Alexandra Gürtler) and Amadeus à la carte. Together with Klaus Egle he publishes the annual Austrian restaurant guide Wo isst Österreich? (“Where Does Austria Eat?).

Toni Mörwald was born in 1967, the son of a restaurateur from Feuersbrunn. He began his training under Reinhard Gerer and continued with numerous great chefs throughout the world. At the age of 22 he was awarded his first toque and opened one restaurant after the other in record time. Toni Mörwald is married and has three daughters.
